Recipe - Hamburger Soup

There is nothing better then a hot bowl of soup on a cold February day. My go to soup for feeding a crew or as warm meal after a cold day is Hamburger Soup. I get my recipe out of the Saskatchewan 4-H 80th anniversary cookbook but have made a few substitutions over the years.


EASY HAMBURGER SOUP

2 lb ground beef

1 medium onion, chopped

2 cups water

3 cans chicken broth

4 carrots, chopped

3 stalks celery, chopped

3 potatoes, chopped

1/2 tsp thyme

1 can tomato soup

1 bay leaf

parsley

pepper to taste

Brown meat and onion. Combine all the rest of the ingredients in a large pot. Simmer covered for at least 2 hours or all day.
